Barbecue Spice Rubs

Pineapple Spice Rub

What you need:

  • ½ cup (60 grams) Dried Pineapple cubes, chopped into small pieces
  • ¼ cup (47 grams) Redpath Golden Yellow Sugar
  • ¼ cup (70 grams) Kosher Salt
  • 1 tbsp (7 grams) Candied Ginger, diced
  • 2 tbsp (25 grams) Paprika
  • 1 tsp (4 grams) Cayenne Pepper
  • 2 tsp (6 grams) Garlic Powder
  • 2 tsp (6 grams) Onion Flakes
  • 2 tsp (8 grams) Ground Cinnamon
  • 1 tsp (4 grams) Ground Clove
  • 1 tsp (4 grams) Ground Black Pepper

Prep time: 10 minutes
Yield: Approximately ⅔ cup (205 grams)
How to prepare:
1. In a food processor, combine the pineapple pieces, Redpath Golden Yellow Sugar, kosher salt and candied ginger. Pulse until the pineapple is in small pieces.

2. To the pineapple sugar, add in the remaining ingredients and pulse 5-6 times to combine.

3. Use the pineapple spice rub right away on your favourite meats and vegetables, or store in an airtight container, in a cool, dry place for up to 3 months.

Garlic and Herb Rub

What you need:

  • ¼ cup (50 grams) Redpath Turbinado Sugar
  • ¼ cup (70 grams) Kosher Salt
  • 1 tbsp (12 grams) Black Pepper, ground
  • 2 tbsp (36 grams) Dried Garlic
  • 1 tbsp (10 grams) Dried Parsley Flakes
  • 1 tbsp (10 grams) Dried Basil
  • 1 tbsp (10 grams) Dried Oregano
  • 2 tsp (4 grams) Dried Thyme
  • 1 tsp (4 grams) Lemon zest

Prep time: 10 minutes
Yield: Approximately ⅔ cup (215 grams)
How to prepare:
1. In a medium bowl combine all the ingredients, and stir with a wooden spoon.

2. Use the garlic and herb rub right away on your favourite meats and vegetables, or store in an airtight container, in a cool, dry place for up to 3 months.

Sweet-with-Heat Brown Sugar Rub

What you need:

  • ½ cup (94 grams) Redpath Dark Brown Sugar
  • ¼ cup (70 grams) Kosher Salt
  • 1 tbsp (7 grams) Garlic Powder
  • 2 tbsp (24 grams) Black Pepper, ground
  • 2 tsp (8 grams) Dried Ginger
  • 2 tsp (4 grams) Dried Chives
  • 1 tsp (4 grams) Mustard Powder
  • 1 tsp (4 grams) Chipotle Powder
  • 1 tsp (4 grams) Ground Cumin
  • 1 tsp (4 grams) Ground Coriander

Prep time: 10 minutes
Yield: Approximately 1 cup (247 grams)
How to prepare:
1. In a medium bowl, add in the Redpath dark brown sugar, breaking up any large pieces with a fork or spoon.
2. Add in the remaining ingredients and toss to combine with a wooden spoon.
