Spook your Halloween guests with these fun and kooky tarantula cupcakes. We guarantee, they’re scarily good.

Tarantula Cupcakes

What you need:
For the Chocolate Cupcakes:

  • 2 1/4 cups (281 g) all-purpose flour
  • 2 cups (500 g) Redpath Granulated Sugar
  • 1 cup (120 g) unsweetened cocoa powder
  • 2 tsp (10 g) baking soda
  • 1/2 tsp (2 g) salt
  • 1 tbsp (15 mL) vanilla extract
  • 2/3 cup (160 mL) canola oil
  • 2 tsp (10 mL) white vinegar
  • 2 cups (500 mL) cold water or coffee

For the Chocolate Frosting:

  • 2 cups (240 g) Redpath Icing Sugar
  • 1/2 cup (227 g) unsalted butter, softened
  • 1 tsp (5 mL) vanilla extract
  • 1/4 cup (30 g) unsweetened cocoa powder
  • 2 tbsp (30 mL) milk (optional)

For Decorating:

  • Black & orange sprinkles
  • Liquorice sticks
  • Black jellybeans
  • Candy eyeballs

How to prepare:
For the Chocolate Cupcakes:
1. Preheat oven to 350°F (175°C).  Line two cupcake pans with paper liners and set aside.

2. In a large bowl, sift the dry ingredients together.  Set aside.

3. In a medium bowl, whisk together the oil, water, vanilla extract and vinegar.

4. Slowly pour the wet ingredients into the dry ingredients, whisking as you pour, until well combined.

5. Fill the cupcake liners 3/4 full with batter and bake in the oven for 20 – 25 minutes or until a toothpick inserted into the center of the cup comes out clean.

6. Cool in the pan for 10 minutes, then place on a wire rack to cool completely before frosting.

For the Chocolate Frosting:
1. Beat the butter with electric beaters or in a stand mixer fitted with the paddle attachment until light and fluffy.

2. Sift in the icing sugar, 1 cup at a time, until the frosting is thick and creamy.

3. Add the vanilla and cocoa powder and stir until well incorporated. If the frosting is too thick for your liking, stir in a tablespoon of milk, one at a time, until you reach your desired consistency.

To assemble the cupcakes:
1. Use an offset spatula or knife to spread the cupcakes with chocolate frosting.

2. Decorate your iced cupcakes with candy to create spooky tarantula cupcakes. Dip your iced cupcakes in a small bowl of sprinkles first. To create the spiders, we used gum balls for the body, black jellybeans for the head, and black liquorice strings for the legs.
