Homemade Strawberry Frozen Yogurt Homemade Strawberry Frozen Yogurt Want to make the freshest, most delicious frozen yogurt ever, but don't have the right equipment? No problem - you'll be scooping up perfect fro-yo in no time with just a bowl, a blender, and a baking pan! Categories: Frozen Desserts Desserts Granulated Sugar Yields 4 – 6 servings Prep Time 1 hour 15 minutes Ingredients What you need: 1 llb (454 g) fresh strawberries, washed and hulled then halved or roughly chopped 3/4 cup (150 g) Redpath Granulated Sugar 2 tbsp (30 mL) vodka 1 1/2 tsp (7 mL) lemon juice 1 1/2 cups (345 g) full-fat Greek yogurt Instructions How to prepare: 1. In a bowl combine strawberries, sugar, vodka, and lemon juice. Stir until combined, then cover in plastic wrap to let sit at room temperature for one hour. This allows the fruit to absorb the sugar and get syrupy. 2. Once macerated, transfer the strawberry mixture to a blender and add yogurt. Blend until smooth. Note: If you don't like strawberry seeds in your frozen yogurt, you can pour the mixture through a fine mesh sieve to strain them out at this point. 3. For best results, you should chill the mixture for several hours or overnight. This helps it freeze faster so that less ice crystals will form as it freezes, resulting in a smoother, creamier frozen yogurt. If using an ice cream maker, follow its instructions to freeze the chilled mixture. If not using an ice cream maker, pour the mixture into a shallow pan and place in freezer. For the next 2 - 3 hours, beat the yogurt mixture every 30 - 40 minutes. This churns the mixture and helps it freeze more evenly. 4. Once fully frozen, transfer to a resealable container and store in freezer. When ready to eat, take the frozen yogurt out about five minutes before serving to let it soften. Scoop into your favourite ice cream cone or enjoy it on its own. CHEF'S TIPS Replace the strawberries with raspberries for a delicious flavour variation. Don't worry about the vodka affecting the flavour; it's there to help prevent the frozen yogurt from crystallizing since alcohol doesn't freeze. You won't taste it at all. To get the creamiest frozen yogurt, it's best to use full fat greek yogurt. You may not get the same results if using the lower fat variety.
